That we care deeply about organic is no secret. Equally clear is that the ingredients we use come from our region. But seasonality matters to us too — and summer simply means cocktail time. So over the coming weeks, we'll be sharing a few recipes here that are well worth shaking up. We're starting with the Leo Mule — the Leogang take on the bar classic Moscow Mule. We discovered it at the bar of the BIO HOTEL Rupertus.

The cocktail 'Moscow Mule' is a love letter from Moscow. It belongs to the highball family — which means it has a higher proportion of non-alcoholic ingredients. Which in turn means you can drink more of it. So #greatintheheat, and because we really need to stop telling ourselves to drink less. Here's the recipe:

4 cl | O-Vodka

2 cl | lime juice, freshly squeezed

200 ml | Ginger Beer (or Ginger Ale)

6 slices | cucumber

1 sprig | mint for garnish

a few | ice cubes

First, muddle 4 cucumber slices in a cocktail glass — preferably a classic copper mug. Add the 4 cl of O-Vodka, the lime juice and a few fresh ice cubes. Top it all up with Ginger Beer, give it a good stir and garnish with a sprig of mint and the remaining two cucumber slices. Instead of Ginger Beer, you can of course use Ginger Ale — though it'll have a slightly less pronounced ginger kick. If needed, a splash of ginger liqueur can help things along.

And because it's absolutely worth a holiday at the foot of the Asitz, a few more words about the Rupertus itself.
