
Finally visited Destillerie Farthofer! A young, very dedicated and enthusiastic young man led us on a guided tour of the distillery. He did it with such passion – everything was truly fascinating. Afterwards, a tasting of the excellent Bio-quality schnapps and the Mostello (tasted just like port wine). Highly recommended!

From Field to Bottle
In our Malzwelt in Biberbach, whisky doesn't begin in the cask – it begins in the field. Here, across 45 hectares of organically farmed land, we grow our own grain varieties, malt them in our in-house malting house, and distil them with the utmost care into characterful organic whiskies and grain brandies.
What was once a matter of course in history is something special today:
We've brought the malting house back into the distillery – taking a decisive step towards true independence and uncompromising quality.

Our Own Malting House
Whisky is shaped by three things:
Grain, malting and cask maturation.
For us, it was clear: if we wanted to produce Bio whisky with genuine provenance and character, we would also need to make the malt ourselves. Industrial organic specialty malt – especially from rare heritage grains such as emmer or naked oats – is barely available.
So in 2018 we commissioned our own drum malting house.
Today we are able to:
process small grain batches individually
malt rare heritage grains
produce specialty malts in a range of flavour styles
work independently of the global malt market
This places us among the few distilleries in the German-speaking world with their own in-house malting house.
