Working organically is not a strategy for us – it's a conviction. We are committed to a consistent circular economy in which nothing goes to waste. What grows in our fields is refined in our distillery. What remains goes back into the cycle. It's as simple as that – and we follow through without compromise.
The Cycle
From Field to Bottle
Bio-Landwirtschaft
Across nearly 45 hectares in the Mostviertel, we grow rare grain varieties and regional fruit varieties using organic farming methods. Emmer, naked oats, winter wheat, Mostviertler Hauszwetschke, Kriecherl and Bohnapfel – everything grows right on our doorstep.
Our Own Malting House & Distillation
The grain is processed in our very own malting house – one of the few private malting houses in Austria. Distillation then takes place entirely in-house. Every step stays in our hands.
Circular Economy
Nothing goes to waste:
Grain stillage and spent grain are passed on as nutrient-rich feed to like-minded organic farmers.
Pressed fruit pomace goes into the production of liqueurs and fruit spirits.
Stone-fruit kernels fuel the wood-chip heating system.
The resulting ash is returned to the fields as fertiliser.
Effective micro-organisms are added to the stillage to increase its fertilising value.

Turning the seemingly worthless into something valuable
The principle of upcycling fits Farthofer like a cork fits a bottle. Day-old bread is transformed into aromatic bread schnapps – a project with Bavarian Bio baker Nikodemus Gottschaller that was recognised with the Austrian Viktualia Award in 2013. And carrots that are too small, too large, or misshapen to find a place on shop shelves are crafted by us into a carrot fruit brandy.
