The last few days have been sunny and warm – the perfect time to harvest our organic elderflowers. Since 1997, our organic elder variety "Haschberg" has been growing on our organic farm in Biberbach. This native Austrian elder variety is also known as "Sambucus Nigra".
We use the wonderfully fragrant blossoms for our Bio Holunderblütengeist, for our organic elderflower syrup for mixing cocktails and – as anyone from the Mostviertel will surely know – delicious deep-fried elderflower fritters (Hollerstrauben). Of course, we don't harvest all the blossoms, as we also need the berries to produce our Bio Holunderbrand.
We're sharing the recipe for our organic elderflower syrup and Grandma Farthofer's recipe for deep-fried elderflower fritters. Enjoy giving them a try!

Recipe Ideas to Recreate at Home

Organic Elderflower Syrup
Ingredients (for approx. 2.5 l of syrup)
1 l water
1 kg organic beet sugar or organic xylitol (birch sugar)
200 ml organic lemon juice
1 organic lemon
25 organic elderflower heads
Organic mint and/or organic lemon balm leaves to taste
Clean the organic elderflowers (do not wash) and place them together with organic lemon slices, lemon juice and organic sugar/xylitol in a large container and stir vigorously until the sugar or xylitol has dissolved. Then add the organic mint and/or organic lemon balm leaves and stir well again. Store the container in a cool, dark place and stir the syrup several times a day. Once no more sugar/xylitol settles at the bottom (usually after about 5 days), the syrup can be strained and filtered (e.g. through a fine cloth). If the syrup is bottled in small bottles, these should be thoroughly cleaned and boiled beforehand.
Grandma Farthofer's Deep-Fried Elderflower Fritters
Ingredients (for approx. 10 fritters)
125 ml organic milk
1 packet Bio vanilla sugar
1 Bio egg
Salt
60 g plain Bio flour
Bio rapeseed oil for frying
Bio icing sugar and Bio strawberries for decoration
Clean the Bio elderflowers (do not wash). For the batter, separate the Bio egg and beat the egg white with a pinch of salt until stiff. Combine the remaining ingredients and leave to rest briefly. Then gently fold in the egg white. Heat the oil in a pan (approx. 4 cm deep), dip the elderflower clusters in the batter and fry in the hot oil until golden brown. Leave the finished fritters to drain briefly on kitchen paper, then dust with icing sugar. We think Grandma's elderflower fritters taste best with fresh Bio strawberries.
